LAUCKE EASY BAKERS GLUTEN FREE SPECIAL WHITE MIX

Standard Loaf

Ingredients

To produce a loaf of approximately 750g.

Preferably weigh ingredients

500g Easy Bakers Gluten Free Special White mix.

380ml normal room temperature water

Method

1. Pre-heat conventional oven to 215°C (419°F) or Fan forced to 195°C (383°F).

2. Place water into mixing bowl.

3. Empty Laucke Easy Bakers Gluten Free Special White mix into the mixing bowl on top of the water.

4. Mix for 2 minutes into a smooth batter using a twin shaft mixer on medium setting, or by hand with a whisk.

5. Pour the batter-like mixture in to a baking pan.

6. Allow the pan to stand in a dry/warm area for approx. 15 minutes to allow the mixture to rise. Do Not cover the baking pan

7. Bake for approx. 30-35 minutes

8. Remove the loaf of bread from the pan as soon as it is taken out of the oven.

9. Allow the loaf to completely cool before cutting.

10. Bread must be allowed to cool completely before cutting or it will stick to your bread knife. Once completely cooled, to keep the bread fresh it should be stored in an air tight plastic bag or container.

Bread Rolls

1. Follow the recipe for the Standard Loaf up to step 4.

2. On low speed mix for 1 minute then medium speed for 1 minute.

3. Using a greased muffin pan, half fill the cups with batter. For a standard muffin pan this will be approximately 50g.

 4. Allow to rise for approx. 15 minutes. If you wish to add toppings such as sesame seed  now is the time.

5. Bake in a pre-heated conventional oven at 225°C (435°F) or Fan Forced at 205°C (400°F) for 12 to 15 minutes.

6. Allow to cool and serve

Pizza Bases

The following amount is suitable for a standard large 28cm (11in) pizza pan.

1. Accurately weigh, or measure 150ml of water and 175g of mix.

2. Mix as outlined for standard loaf (step 4.).

3. Deposit the batter thinly into the greased pizza pan.

4. Allow to rise in a warm place for 15 to 20 minutes.

5. Pre-bake at the bottom of a pre-heated conventional oven at 230°C (445°F) or Fan Forced at 210°C (410°F) for 10 minutes ( the base will shrink slightly from the sides of the pan).

6. Remove and allow to cool slightly

7. Spread the base with tomato paste and top with your favourite toppings.

8. Finish the pizza with grated cheese and perhaps an extra squirt of olive oil.

9. Finally bake at 230°C (445°F) toward the top of your Conventional oven or 210°C (410°F) for Fan Forced until you are happy that it is baked to your own requirement.

Pancakes - Savoury or Sweet

Makes 5 - 8 pancakes.

1. Weigh or measure 190ml water and 200g mix (add approx. 20g of sugar for a sweeter taste). Add water for thinner pancakes and reduce for thicker style.

2. Combine the ingredients in a bowl and whisk until a smooth paste is formed.

3. Heat a skillet or fry pan over low to medium heat. Once warm , grease lightly

4. Pour approximately 1/4 cup of batter at a time for each pancake.

5. Once pancake begins to bubble and the bottom turns golden brown, turn over and fry the other side.

6. Serve warm or cold , topped with your favourite condiments.
